Learn to cook…..at the Institute di Arte Culinaria with Executive Chef Lorenzo Polegri Chef Lorenzo will take the adventurous participants to the real deal of cooking, directly involved in the guided search for the basic products at the various local markets, wineries, oil mills, pasta factories and vegetable gardens located in the Orvieto’s area and its countryside. This course is a full hands-on great experience!

Day 1 Saturday
Arrival in Rome's Fiumicino Airport and transfer to Orvieto. 1:00 p.m. Lunch at Zeppelin. Free afternoon. Dinner at Zeppelin and introduction to the course, cooking schedule, ingredients of the week, Chef's jacket and apron handed out to the participants. (L,D)

Day 2 Sunday
9:00 a.m. - 1:00 p.m. Umbrian Classic Baking and Fresh Pastas (Part 1) hands-on Class I. 1:00 p.m. Wine Tasting and Lunch at the Zeppelin. 3:30 p.m. 'Feeling like the natives…' visit to Orvieto, the Grottos, il Duomo and Torre del Moro. Dinner at Zeppelin. (B,L,D)

Day 3 Monday
9:00 a.m. - 1:00 p.m. Traditional Fresh Pastas (Part 2) and Umbrian Pastry hands-on Class II. 1:00 p.m. Wine Tasting and Lunch at Zeppelin. 3:30 p.m. Workshop and wine tasting at a local winery and visit by the best butcher in the whole area of Scianca. Dinner will be a BBQ at Chef Lorenzo's farmhouse, cooking a variety of meats and vegetables, with a large selection of wines and more... !!! (B,L,D)

Day 4 Tuesday
9:00 a.m. - 1:00 p.m. Soups, Sauces with Truffles, Mushrooms and Vegetables, Game Sauces hands-on Class III. 1:00 p.m. Wine Tasting and Lunch at Zeppelin. 3:00 p.m. Visit a buffalo farm, workshop and cheese tasting at a local 'Caseificio'( Dairy Factory) and a visit to Civita, 'the dying town'. Dinner at 'Peppe', an authentic 'trattoria' in Orvieto. (B,L,D)

Day 5 Wednesday
9:00 a.m. - 1:00 p.m. Antipasti, Vegetarian recipes and Poultry Class IV. 1:00 p.m. Wine Tasting and Lunch Zeppelin. 3:30 p.m. Visit of the Etruscan Tombs and Foresi Wine store. Dinner at the Zeppelin. (B,L,D)

Day 6 Thursday
9:00 a.m. - 11:00 a. m. Orvieto's Square Market and visit to the best pastry maker in town. 11:30 a.m. - 12:30 p.m. Extra virgin olive oil seminar with tasting and oil evaluation. 1:00 p.m. Wine Tasting and Lunch at Zeppelin. 3:30 p.m. Umbrian meats and fish Class V. Free afternoon. Dinner at Zeppelin. (B,L,D)

Day 7 Friday
8:00 a.m. - 11:00 a. m. Truffle Hunting with Giovanni and his dog Diana!!! 11:00 a.m. - 1:00 p.m. Free time. 1:00 p.m. Wine Tasting and Lunch at Zeppelin. Free afternoon. Dinner at Zeppelin with the Certificate ceremony and a group picture. (B,L,D)

Day 8 Saturday
Transfer from Orvieto to Rome Airport for your departure back home. (B)
